Pistachio Risotto
This risotto with an enveloping and refined flavour is presented as a delicacy that combines the creaminess of Italian Carnaroli superfino rice and the delicate and aromatic taste of pistachio. The onion base adds a sweet and savoury note, while the pistachio paste gives a velvety texture and a unique depth of flavour. The extra virgin olive oil and safflower help to enhance the dish with a light intensity of flavour, while the natural aromas complete the sensory experience.
ingredients: Italian CARNAROLI superfine rice (93.1%), pistachio (2.8%), onion, pistachio paste (1.4%), EVO oil, natural flavouring, safflower, colouring E102 E131 (in
variable proportions).
Preparation Method:
Heat 1 L of water or broth. Pour 5 tablespoons of EVO oil or a knob of butter into a pan, add the flavored rice and stir for a minute. Continue cooking by adding the broth or water a little at a time and stirring often.
Once the rice is cooked, stir in a knob of butter and add salt.
