Squid Ink Risotto
Squid ink risotto with superfine Carnaroli rice is a rich and tasty dish, where the Italian rice, with its perfect consistency, absorbs the intense and marine flavor of the squid ink. The EVO oil enriches the dish with a fruity note, while the garlic gives a delicate but decisive aroma. The combination of these ingredients creates an aromatic dish, with a perfect balance between the flavors of the sea and the richness of the rice.
ingredients: Superfine Italian CARNAROLI rice (95.3%), cuttlefish ink (2%), EVO oil, garlic (contains sulphites), colouring E150 (in variable proportions).
Heat 1 L of water or broth. In a pan pour 5 tablespoons of EVO oil or a
knob of butter, add the flavoured rice and stir for a minute. Continue
cooking by adding the broth or water a little at a time and stirring often.
Once the rice is cooked, stir in a knob of butter and add salt.
